Chef's Restaurant It's always a good idea to make a long-term commitment: after a successful launch last year, Alexandre Polmard (of the butchers of the same name) and Maxime Petit have consolidated the toques this year, maintaining the same line: irreproachable products (and exceptional meats, of course) with a hint of the exotic from Peruvian chef Manuel Rondan, who prepares a fine tiradito of milk-fed veal in a smoky guacamole sauce, or a ceviche of trout with tiger's leche passion physalis confit and plantain banana, before braising octopus or matured onglet with hazelnut butter. Well-constructed menus, good desserts, extensive cellar.
