Travelers stunned by the village's cachet will open their eyes even wider, if they're not regulars to our publications, when they read the map proposed by Denis Fétisson. The nephew of Paul Bajade (the king of truffles) has been well educated in the ways of a rich and generous Provence, as also exemplified by one of his illustrious neighbors, Roger Vergé, at his Moulin. There's all that in this beautiful house on the square, generosity and empathy. The chef knows his customers' tastes and finds a way to please in every season: truffles in winter, lobster in summer (a dedicated menu), foie gras ravioli, golden egg with Petrossian caviar, pigeon from Versini, a model dish of character and charm with its giblet royale with juniper, corn flame and blackcurrant juice... All the menus are interesting, but the €85 is very well placed, with bouillabaisse in consommé and lamb with olives and anchovies. Nice spirit in the reception and service, rich cellar, well stocked with local vineyards.
