Chef Xavier Malandran has moved his pots and pans to Mougins. After the Grasse region and his Lougolin in the shade of century-old lime trees, here's Laflora (the former Clos Saint-Basile) and his new playground with its neat, contemporary decor. The chef has lost none of his audacity on this journey, and sends out inspired dishes. A first menu at €39 in three sequences demonstrates his mastery of textures and cooking, with sweetbreads as a croque, meat jus with broken trumpets of the dead, tournedos of chuck cooked for 12 hours, reduced cooking juice and squash in several ways. Last but not least, the dessert platter by chef Christophe Ferré (Le Bistrot des Saveurs), including a praline-crusted cabosse with milky caramel chocolate that commands respect. In the cellar, all the goodies are at hand, with a small downside with the wine by the glass which, apart from the great vintages on offer, is only a Provence wine at €10, which leaves no memory. Well-run and very pleasant service.
