Théo Hernandez and Claire Cames spent two months in 2025 renovating their beautiful building, which retains all its red-brick exterior charm; the interior has been given a facelift, with white walls and wooden floors, while retaining the blacksmith's fireplace as the centerpiece. The menu here is always a four-course affair, plus cheese if required. On this spring evening, a foie gras mi-cuit from Maison Mitteault accompanied by local strawberries, a beautifully cooked trout confit in clarified butter with a beurre blanc and a vegetable jardinière, a well-cooked squab with artichoke, leg confit and giblets seasoned with cherries before a lightly revisited rhubarb charlotte. The balance is present on every plate in a certain classicism, on the terrace in summer, in winter by the fireplace. The well-stocked cellar covers all the different regions of France, and prices are generally reasonable.
