North of Toulouse, on a small square with a fountain, David Biasibetti has modernized the interior of his restaurant with new wooden tables and a décor reminiscent of the region's pink bricks. The various menus are clear, the dishes are seasonal, and reflect the restaurant's technical expertise and mastery of cooking techniques, such as the millefeuille of scallops, Auntie Claire's broth, pot au feu and truffle, or the monkfish cooked at low temperature. The pear and chocolate dessert also follows the meal, with each element in its place. Pleasant room, varied and accessible cellar.
