Even though Quint-Fontsegrive is now a mere suburb of Toulouse, this beautiful, well-appointed building gives the impression of being in the heart of nature. Chef-gatherer Sylvain Joffre makes the most of his local terroir, as the names of the hidden dinner menus suggest ("Jardin et cueillettes", where proteins are merely a condiment to the vegetable, and "Territoire d'ici" at €80 and €98). At lunchtime, a more affordable offer starts at €47. In the evening, we plunge headlong into the chef's universe with his mise en bouche, where each of the nine preparations has its own identity, which can change with the seasons. The bread is, of course, baked in their own artisan bakery. The sauces, such as the vegetable "sang" made with beet juice, wine and meat juice that accompanies the hare, are masterfully executed.
