Arkadiusz Zuchmanski and his wife Marguerite, both French at heart and originally from Poland, are in love with fine products and traditions, and this is the love story that the chef brings to life in his elegant downtown restaurant. Right next to the Halles Saint-Pierre, convenient for local supplies, the restaurant has a very contemporary sobriety, with its shades of gray evoking volcanic stone, its tables in monochrome white, the elegant floral compositions on the wall, between minerality and nature. The chef celebrates the seasons with plates of great terroir, including a starter of potimarron, chestnut confit and undergrowth, bruschetta, crispy ham and bacon foam, roast filet of saint-pierre, fregola sarda and vegetables, lobster emulsion, a signature dish of hare à la royale, superbly executed, gnocchi with black truffle, undergrowth mushrooms, parsnip velvet and foie gras sauce, a dessert with tonka bean, Weiss Ceiba chocolate from the Dominican Republic, Jean-Paul Lefoulon XO cognac. Very fine cellar, with over a thousand bottles.
