Chef's Restaurant This is the gastronomic restaurant par excellence in the center of Clermont, with its definitively upmarket spirit, its taste for fine service and products, and the professionalism and exacting standards of chef Arkadiusz Zuchmanski. Adjacent to the Halles Saint-Pierre, the establishment pays homage to the Auvergne region by showcasing the very best the region has to offer, without forgetting to take a few luxurious detours. Highlights include gambero viola di San Remo tartare, veal pressé with chanterelle mushrooms, chicken jus and artichoke barigoule, open ravioli with porcini mushrooms and blue lobster cooked in butter, hare à la royale, potato gnocchi with black truffle and mushrooms, fig and honey tart from Guy Hofmann, bourbon vanilla ice cream.
