From the open-plan kitchen, you can see these professionals at work, working with talent, by the minute. It's an original concept in that it's a restaurant, a wine and spirits cellar straight from Asia (there's even a Vietnamese gin!), and a delicatessen for all lovers of good produce. Let's return to the menu to cite a few tasty and refined examples: eel or sea bass sashimi, sea bream nigiri, salmon temaki, Label Rouge beef fillet yakitori, gyoza, lemon yuzu tart, Japanese rum baba, mochi...
