Gourmet Restaurant An interesting new addition for the Hôtel de la Cité and Jérôme Ryon's teams. It's not just a change of name for the ex-Brasserie Le Donjon, but a more modern evolution of the Occitan bistro concept. In fact, the success is there, the welcome distinguished and the decor clear and sought, library, frames and bottles, touches of color also soft, but energizing. The tables are a little close together to maintain the bistro spirit, the atmosphere a little noisy. A well-trained team, with a manager who knows his wine list, mostly from the region, for a well-framed meal that doesn't quite exude the expected artisanal feel: "traditional" vol-au-vent, mussels and spinach, a little basic, good duck breast with orange, shiitake, pak choï cabbage, a bigarade jus, good meat, fresh vegetables, neat jus that lacks a little citrus, runny chocolate moelleux (not very runny), salted butter caramel ice cream. All in all, however, a very decent meal that merits a first toque.
