Chef's Restaurant Just a stone's throw from the Château des Rohan, the Jaeckels, who have been running this "little staircase" for almost forty years, are not blasé about treating the people of Savern. In the setting of an elaborate local table, under the benevolent eye of Fabienne Jaeckel, it doesn't take long to become a regular in this soothing atmosphere, thanks to the quality of their reassuring cuisine, to which Michel pays constant attention. This verve-filled chef manages to make everything he touches fine and gourmet. We love the authenticity of this melting, powerful foie gras, whose lobes are still visible, even if it's a little too richly spiced with gingerbread spices, and the deliciously cumulative gourmandise of this audacious crisp of sot-l'y-laisse à la reine, the slightly overcooked monkfish, escorted by a delicious late-harvest Riesling sauce and bundles of lobster and oak lentins, the sweetbread rouelles accompanied by a tasty Albufera sauce. The desserts are in the same vein, with a variation on vanilla: the chef doesn't cheat, there are vanilla beans everywhere, combined with pineapple and rum. Everything offered on menus still preserved from inflation is generous, and so reassuring.
