Chef's Restaurant It's the big news in the area, and this brand-new Relais & Châteaux had to pull out all the stops. The magnificent château, just a few minutes from Cognac, has been entirely renovated to the highest standards, and boasts a rare attention to detail: sumptuous woodwork and Murano glass sculptures, bespoke furniture, art deco-style rooms and palatial service. To complete the picture, of course, there's the bistro and a gourmet table, set in an authentic Napoleon III salon, all cream wood, moldings and gilding. The team and chef Anthony Carballo have thought of everything, from the georgette to the declined butters, the menus carved in wood and the spirit of a total experience, to conclude around elegant terroir cuisine. The chef promotes a demanding ethic, favoring short circuits and producing locally when he can, in the château's gardens, where you'll find orchards, greenhouses, vineyards and a chicken coop. In the spirit of the menus, in four or six courses, the mushroom tartlet, heart of egg yolk confit, venison ham and buckwheat, a work around sturgeon and leek green, cockle foam and white wine gel, a roast rack of pork, pommes soufflées, garlic mashed potatoes, grenailles and confit pig, reduced jus and parsley emulsion, or a blanc manger, a declension around pear and strips of confit Buddha hand. Very fine cellar, with many great references.
