Remarkable Restaurant Between Cognac and Angoulême, the Verrat house almost single-handedly embodies a whole area of Charente gastronomy, proudly bearing the values and terroir of the region for thirty years. Initially the kitchen of Thierry Verrat, then a four-handed venture between father and son, since Julien joined him in 2017, it is now a successful continuity between the two generations, the knowledge and experience of the former, the movement and exoticism of the latter who has traveled. The €140 menu expresses these complementary personalities, with chestnut and fattened duck cappuccino with burnt bread, Petrossian caviar tin and koshihikari rice, Dungeness crab salad with chive oil, pastry stuffed with lemon caviar and shiso, red shellfish butter, blue lobster, half-cooked half-cooked on barrel embers, emulsion with thermidor sauce, tomato compote with sweet chili pepper, jugged hare with black truffle snow and grilled porcini mushrooms, full-bodied jus, moelleux with grand cru chocolate and XO cognac, fleur de sel from Oléron Island, fresh seaweed.
