Chef's Restaurant The magnificent 5* estate is a timeless place, a rare industrial heritage site renovated as a luxury hotel in the heart of a wooded park. The former cathedral cellar is home to the gourmet cuisine of Mathis Debize and pastry chef Alexandre Mornet, the former of whom worked with Alexandre Baumard and Paul Bocuse, while the latter studied with Christophe Hay. The duo have fulfilled their mission with honors, serving three product-based menus under the century-old tuns, at €75, €95 and €140. You'll discover a declination of artichokes from the Tauziet farm, roasted, creamy with pineau des Charentes and sabayon with vinegared miso; the return of fishing with early vegetables, potatoes confit with bonito and Nantes butter with smoked fish roe; a beautiful AOP poultry from the Bourbonnais region, cooked on the trunk and poached in hay, celeriac and vegetable juice; a Valrhona chocolate in texture, buckwheat, gavotte and praline. The cellar is dense, with several hundred references, from hall-of-famers to more confidential choices, Coulée de Serrant, Dagueneau, Grillet, Gripa, Petrus and Lafite-Rothschild, as well as Lescure, Duband and Peyre Rose.
