To satisfy our customers, the cathedral cellar is home to Mathis Debize and Alexandre Mornet's gourmet table, where the produce reflects all the richness of the Charentes region. We start with egg and potato espuma with hay, onion compote and Sturia caviar, before moving on to the coast with low-temperature maigre de ligne royannais, arugula purée and beurre blanc with smoked fish roe. We continue with a fine roast Pompaire pigeon, green asparagus, black garlic condiment and vine stock jus, and finally strawberry ciflorette, ribot cream, tart and sorbet, garden lemon balm.
