Chef's Restaurant More than fifteen years of good service and a reputation that's still going strong for this restaurant in the heart of Jarnac. Ludovic Merle has a solid background, having worked at Le Pierre in New York and with Georges Blanc. The dishes reflect a taste for tradition, nourished by local influences. There's the creamy summer truffle risotto, roasted king prawns and oyster mushrooms, truffle cream, scallops and shellfish jus with Charentes saffron, peas and fava beans, beef tournedos on lava stone, pepper sauce and potatoes from the Ile de Ré, cognac fleur de sel, or apricots confit with coarse sugar and rosemary, praline millefeuille.
