It's a beautiful and wise house paying homage to the Charente, a modern regional gastronomy, from the land to the coast. You won't want to miss the shellfish with Charentes saffron, celery and oyster ravioli, emulsion, shiitake brunoise and celery stick, pollack with ginger, orange, roasted zucchini and smoked basil, veal fillet with Charentes butter, mushroom cream flambéed in cognac, potato mousseline with truffonade, poached and roasted pear, shortbread crumble and Belle de Brillet, williams sorbet.
