Chef's Restaurant As the decades go by, the Soubise remains Dunkirk's benchmark for tradition well understood. Michel Hazebrouck has been cooking for 60 years, and his restaurant has been featured in our columns for 35 years. The two toques are a perfect match for this exemplary establishment, where the regional menu is so pleasing (waterzoï, grilled andouillette) and the dishes so well polished: parmentier of Radinghem snails, Jacques Altazin salmon, poultry with lemon in the Découverte menu at €48. The grand Jubilé menu at €63 features the house classics.
