This master of classic cuisine delights the taste buds with his signature dishes, such as cassolette de sole Roger Portugal.Michel Hazebrouck is first and foremost the man behind a house, Le Soubise, an institution like few others, an unchanging 18th-century inn located opposite Fort Louis Park, just a few minutes from the center of Dunkirk .
Le Soubise: a culinary institution for 40 years
He was trained in the late 1950s by Roger Portugal, who was awarded the MOF a few years later, in 1961, the same year as Paul Bocuse. After a long and varied career, Michel Hazebrouck became chef and owner of Le Soubise in 1984. In 2024, he celebrates his 80th birthday, 65 years in the kitchen and 40 years in the house .
The guardian of traditional French cuisine
A champion of classic cuisine - "When modern cuisine arrived, I was 50 years old, so it was probably too late to change",as he puts it himself - he makes it a point of honour to continue to serve traditional French cuisine.He still makes it a point of honor to serve the historic "cassolette de sole Roger Portugal", sweetbreads with port wine or grilled tournedos with béarnaise sauce, all models of their kind.
