Gault&Millau's review 2025

“It’s a lifelong project,” they like to say… Both natives of the region, chef Christophe Dufossé and his wife Delphine fell head over heels in love with this château, a little architectural gem nestled in the heart of nature just a few kilometers from Béthune. After a few months of restoration, they invite their guests to discover one of the 28 rooms and suites, each featuring contemporary elegance—light color schemes, light-wood furniture, and large windows opening onto the expansive garden… This charming estate is home to a small farm with goats, sheep, and ducks; a forest filled with birdhouses to delight the birds; an orchard; and a permaculture vegetable garden. This appreciation for and respect of nature remain intact in Christophe Dufossé’s remarkable gourmet cuisine, which celebrates local farmers and producers. To extend the experience, the Côté Jardin brasserie offers a more casual take on regional cuisine, and the Sothys Spa features a 20-meter indoor pool, a hammam, and a sauna.
