It’s a piece of history in the town of Bergues—a house dating back to 1597 with period architecture, decorated in a charming rustic style. Flemish traditions are celebrated here in abundance: Bergues-style open-faced sandwiches, Welsh rarebit, endive gratin with Maroilles cheese, potjevleesch, Flemish-style rabbit, fish waterzoi, grilled pork tripe, and chicory crème brûlée.
