Prestige Restaurant Sarkara is the culmination of a concept in a palace setting. It's not all that new, since it involves entrusting the kitchens to a pastry chef (we've known since Marc Veyrat that it's possible). In the case of Sébastien Vauxion, the challenge goes a step further, as he creates a whole sequence of dishes that could also be desserts. The performance is a little crazy, and very successful, in this sequence where the service is also royal, in the chic cocoon setting of the K2, with its majestic view of the mountains. For all that, the privileged few who get to sample the "gourmet patisserie" dinner experience can concentrate on their plates, as the restaurant is only open in the evenings during the winter season. And if meat and fish have been deliberately avoided, the chef works mainly with fruit and vegetables, selected for their exceptional quality, transformed and combined by sophisticated techniques to create original dishes. For example, the brown mushroom-coffee (mushroom and coconut ice cream, grated mocha ice cube, candied kumquat syrup) is an ensemble of textures, flavors and temperatures that offers a new experience with every mouthful in a spectacular mise-en-scène. One of the star products is tuberous chervil, here pan-fried with Bozel saffron and orpimento, sea buckthorn juice and a glazed farmhouse cream. As a counterpoint, the desserts seem a little less surprising, but if we abandon the salty side, it's in favor of a great delicacy of flavors and equally subtle preparations, such as blackcurrant-angélique and its sugar flakes. The sommelier has an excellent program of wine, tea, spirits and juices to accompany the meal, or you can choose directly from the vertical range of Pétrus, K2's privileged partner.
