Forever the Best! In its model chalet, the family grows and prospers. Oscar and Calixte, the third generation, are gradually joining the world of La Bouitte, and the latest events are putting a positive spin on a house you can't help but love. Less demonstration, less fuss, the house is refocusing on its country and Savoyard values, on sincerity and simplicity. There's no need for ten people around a plate, no more endless farandole of appetizers. It may mean one less decoration, but it brings everyone closer to the land. If the prices haven't changed, we've been seduced by the content, the cardoons so demanding (especially to pick) exactly as we like them, and the shallot in declension with a rye bread broth for a real return to the fields, trout on a bed of chard under a veil of beaufort, and the emblematic vol-au-vent of sweetbreads and snails, veal jus and chanterelle pickles, all small pebbles once again sown by René and Maxime to help us find our way back to the truth of La Bouitte. The deflation continues with pigeon with cranberries or apple with caraway, few ingredients, good work and simple pleasure. The welcome and service, in mountain garb, velvet breeches, crampons and a vest over a white shirt, are in the same vein; the great classic cellar now needs to open up a little more and find more vintages under €100.
