Chef's Restaurant The beautiful Château Léognan estate, in the heart of the vineyards, extends the experience with its luxury hotel and gourmet restaurant. Nestled in the heart of nature, Le Manège welcomes guests to a bucolic setting, with a terrace and large, wood-panelled dining room reminiscent of a dacha. At the piano, chef Gaël Derrien, under the direction of Flora Mikula, champions an elegant cuisine based on locally sourced produce: pan-fried foie gras by Michel Dubos, poached Charentais melon with citrus fruit, honey and banyuls reduction, melon marmalade, fregola sarda with saffron and roasted zucchini, ossau iraty and garden mint, fillet of beef smoked with vine shoots from the estate, pommes dauphines with Basque ewe and jus de viande. On the pastry side, Charaf Chrikioui unveils his first creations, such as Lot-et-Garonne peanuts, brick pastry, vanilla cream, milk jam, caramelized peanuts, raw milk and tonka ice cream. A fine Bordeaux cellar, not forgetting the estate's own crus.
