Chef's Restaurant In the remote Mauges region of France, you'll discover a cleverly renovated château, a blend of tradition and modernity, with a dining room in the former orangery, its walls covered with contemporary paintings and sculptures. Since his arrival a year ago, young chef Lucas Bahuon has put his talent at the service of an inspired, delicate and refined cuisine; confit trout petals are combined with smoked faisselle, the first peas and the whole, sublimated by a rhubarb water with lemon leaf; a three-toque starter like this dessert where each citrus marble explodes in the mouth with notes of aloe vera and lemon balm; between the two, a slab of pollack cooked a la seconde on Japanese barbecued chard leaves, served with a tangy tarragon beurre nantais ; from the appetizers to the mignardises, from the wheel of bread to the homemade semi-salted or hay butters, everything is refined around a harmonious, intelligent, creative cuisine where every detail counts and every element is well thought out and in its place; the charming welcome by the owner and the short, well-constructed wine list complete the harmony that emanates from this timeless place.
