In a quiet neighborhood on the outskirts of town, a contemporary barn with country-style decor and wide windows opening onto a garden, the stage is set for a classic, well-executed cuisine. The arugula sorbet is the perfect accompaniment to the house-smoked salmon, the filet mignon is precisely roséed, and the chef adds spices to his dishes with black curry for the squid, long Java pepper for the butcher's cut or yuzu for the cod infused with coconut milk. An exhaustive and well-documented menu of nine coffees takes us on a journey from Honduras to Colombia. The wine list is rich in fine Loire flasks, and the choice of wines by the glass is always accompanied by a commentary. The desserts are undoubtedly in need of refinement, in a well-priced return-to-market menu.
