His table is a sure bet, where regulars return with confidence, for its wood-panelled dining room and traditionally inspired cuisine. The menu changes regularly, with a terrine of duck foie gras cooked with Gewurztraminer marc, toasted brioche and fig compote, chicken supreme with Riesling blanquette sauce and spätzles, and iced savarin with raspberry sorbet and vanilla ice cream.
