Chef's Restaurant The event of the year for this famous Strasbourg Casserole was the arrival of Kevin Stroh, a young chef trained at the Villa René Lalique. His contemporary classic cuisine, intelligently revisited, breathes a breath of freshness and aesthetics: precise, rooted in taste, it plays on memory without giving in to nostalgia. To celebrate the house's tenth anniversary, the chef had the bright idea of reinterpreting some emblematic dishes in bite-size form: a lobster cake with bisque mayonnaise, salmon trout gravlax with yuzu and bibeleskas, or "Chocobeef" beef tartar with caviar. Tasty, fresh, well-balanced and well-balanced. The menu continues with clean, well-thought-out plates. Duck foie gras, flanked by candied rhubarb and chocolate crumble, plays a fine balance between sweet, sour and bitter, enhanced by an airy, flowery royale. This is followed by Alsatian asparagus served as a white-green duo, enhanced with strawberry, elderberry and a precise, gourmet sake sabayon. Softly cooked pike-perch, tender to perfection, is escorted by Ettendorf snails, wild garlic broth, kohlrabi and potatoes. Then comes the sweetbread, nicely browned, accompanied by a somewhat timid woodruff jus, sober polenta and corn on the cob. The desserts maintain the level: a clean, concentrated raspberry-pink, like a great pre-dessert, or a superb work on Santo Domingo chocolate, counterbalanced by a highly original caramelized cinnamon ice cream. As a finale, like a high point to prolong the pleasure: a pistachio, lemon and coconut tart to share, precise and not too sweet. The wine list, entrusted to the passionate Bertrand Dupont, is impressive: 36 whites and 47 reds available by the glass, thanks in particular to the Coravin system. The decor by ADN Décorateur, with its backlit leather, alabaster pedestal tables and Lalique sconces, offers a warm, aesthetic setting. However, the lack of space and privacy, accentuated by the ever-popular success of the restaurant, may prove a hindrance to those who prefer peace and quiet. Under the watchful and benevolent eye of Cédric Kuster, service strives to maintain a steady pace. And while the wines may sometimes arrive a little late, the smiles and kindness of the team easily compensate for these minor shortcomings, demonstrating their sincere and warm hospitality.
