Gault&Millau Academy's member More than just a chef, more than just a great professional, more than just a passionate collector of grands crus, Patrick Henriroux is above all a good man. Towards his team, who thank him every day by keeping the mill running perfectly, towards his family - the transmission is gradually taking place with the children - and towards his customers, whom he has been pampering and delighting for so many years. This Pyramide, legendary since Fernand Point, has remained a unique temple thanks to the efforts of this chef-owner who has a sense of welcome as well as a sense of sharing. And he creates, on the fly, dishes that resemble him, generous and technical, in menus that have the finesse and gourmandise that only a great house can provide, including in the service orchestrated by the always excellent Mickaël Bouvier. Once again this year, there's no shortage of delightful sensations, from the heart of Balik salmon with carrot and focaccia in fermented juice, to the ideal marriage of lobster and artichoke, turbot and chard with matcha tea beurre blanc, or the earthy, enticing sweetness of sweetbreads with sauternes and curry, with a personal interpretation of French peas. Very fine desserts, fruit or chocolate (we still remember the scent of spruce on the chocolate pain soufflé). The cellar is, quite simply, a monument to the artist's love of all vineyards, the Rhone in particular, with some 2,000 references offering great vintages galore and an unrivalled wealth of pleasure at all prices.
