Gault&Millau Academy's member One of the hallmarks of the dashing octogenarian Georges Blanc is that he has never backed down, never regressed. Curious, young and avant-garde by nature, he crosses the decades with the desire to want, the desire to please of course, but which is quite simply a life impulse. This house, this universe, so much so that the whole village of Vonnas identifies with Georges Blanc and his family, he adds new stones to it every year. The cuisine he builds and makes shine with the help of his orchestra, one of the finest in France, and in extreme harmony with the maestro's wishes, is always evolving, with its Bresse hallmarks, but sniffing the air of the times with relish. This year, yet more discoveries, yet more smiles from beatified customers in the face of this madcap ingenuity that gives sparkle to the poor as well as the rich: the trout with Bresse saffron was well worth trying, as was the magnificent lobster à la flamme and savagnin miso and harissa coraillée, the astonishing (blind, you wouldn't bet on the signature of this UFO) oignon de Roscoff cazette de Bourgogne and velvet of fresh coriander, and the enticing sweetbread, in golden apple with its marinière of shellfish and house wine. The desserts are like times of rest, soothing and velvety with gourmandise ("babagrumes" and long pepper sabayon, island soufflé with lime and maracuja...). In the Gault&Millau Academy that he represents so well, Georges Blanc is exemplary in his presence, dynamism and perfectionism - the intrinsic qualities of France's greatest chefs. The dining room is in perfect harmony, with a sommelier twirling among the thousands of bottles that make up a cellar that is also representative of the genius of this country's winegrowers.
