Chef's Restaurant Behind the black façade lies a small, intimate 14-cover dining room with a rather rococo setting. Chef Nicolas Mouton, who has worked at some of the world's top restaurants, offers a unique 6-course menu at €75. Starting with a small puffed pizza topped with a Caesar salad, then an appealing coulibiac of gravelax salmon with mushroom sauce, followed by a bouchée à la reine of blue lobster, then a rouelle of roast saddle of rabbit with sage and lemon accompanied by a coco-artichoke ragout, a first fig dessert, lemon and blackcurrant madeleine cookie, lavender cream and to finish a magnificent golden lemon-verbena sphere. Small cellar, friendly service for these two stable toques.
