Gourmet Restaurant In the Orb valley, in the Haut Languedoc nature park, is the home of chef Thierry Deloulay, who knows his region, its producers and their products, and draws inspiration from them for authentic, fresh and friendly cuisine. The menu is fairly short, as it evolves with the seasons and the weather, and the wine list includes a number of fine wines by the glass. Line-cut pollack crushed with baby carrots, pigeon in a crust of smoked bacon and roasted tomato, Olargues chestnut millefeuille with chestnut ice cream. Efficient service under Madame's leadership.
