Chef's Restaurant Taken over five years ago by brother-and-sister team Lise and Matthieu Vidal, this magnificent estate in the heart of the Languedoc region boasts breathtaking views of the surrounding countryside and a bright, contemporary setting that sets the stage for a cuisine of fine produce. The chef demonstrates real savoir-faire, championing fine origins and a marked identity: celtuces de Pézènes-les-Mines façon mimosa et poutargue, maigre de Corse, chou-fleur et beurre café de Paris, magret de canard des Landes, petit épeautre, girolles et jus gras, une tarte fine de fraises du Pays, vanille et verveine. The house also offers guest rooms.
