Chef's Restaurant The address has everything to please, from its exceptional location just off Nauzan beach, its tasteful setting, Clémence's warm welcome and the cuisine of Alexandre Lavigne, who trained with Frédéric Anton. The result is an experience rich in emotion, where know-how is at the service of a new, bistronomic idea of the product, always presented with a fine artistic sensibility. The menu is full of relief, creativity and choice, with the maigre de ligne en transparence, gel au kalamansi, citron noir d'Iran, oeufs de hareng fumé, pastorale de jeunes pousses, langoustine en risotto crémeux, jus de tête corsé, pointes d'asperges croquantes, Angus chuck cooked on a string contised with Colonnata bacon, agata purée with olive oil and marrow jus, strawberry and lychee tartar, rose-infused syrup, Java pepper meringue, strawberry sudachi gel, violet ice cream and lychee emulsion.
