It’s a charming, cozy restaurant in the Royan region, run with energy and dedication by Florian Puglia and Julie Védrenne. The seasonal cuisine is primarily plant-based, presented with a modern, minimalist approach, featuring a modular menu ranging from three to seven courses: cauliflower and Meyer lemon, pollock with shiso and turnip, veal with butternut squash and yeast, sunflower and olive oil—all executed with great creativity in terms of textures and flavor pairings. Yet the restaurant also celebrates traditional dishes, such as its seasonal game menu. A lovely, serene setting, with an interesting and eclectic wine list focused on organic and biodynamic wines.
