Chef's Restaurant The restaurant is hidden behind the terrace and entrance of a hotel: discreet access for a table that deserves a detour. The clear, uncluttered dining room, bathed in natural light, creates a calm, soothing atmosphere, ideal for savoring a cuisine that favors precision and sincerity. In the kitchen, chef Florian Puglia creates precise dishes based on balanced textures and seasonality. True to his commitment, he concentrates his cooking on what can be found within fifty kilometers of the restaurant, reinforcing the link between terroir and plate. The wine list is the restaurant's other great strength. Designed by sommelier Julie Vedrenne, it impresses with its breadth and originality: several hundred references, largely organic, natural and biodynamic, with a particular focus on regional winemakers and singular cuvées. At lunchtime, a €31 lunch menu allows you to discover the spirit of the house, between demanding standards and simplicity, with particularly convincing value for money.
