Overlooking the Rémigeasse beach, the 5* Hôtel du Grand Large offers one of the most beautiful views on Oléron, and is undoubtedly one of the best hotel experiences on the island. To accompany this unique setting, MOF David Boyer has created a perfectly harmonious marine cuisine, executed by chef Marina Mikheeva. The Écume menu, priced at €79, offers a wide range of dishes, including lean meats tartar with special oysters, beet and blackcurrant buds, a retour de criée with Charentes fennel and champagne sauce, a rack of Limousin veal with sage, cabbage ravioli and girolles jus court, and an apricot soufflé with verbena sorbet.
