Remarkable Restaurant For the past ten years, Calvados-born chef Jérémy Morin has been delighting Toulousans in his discreet restaurant, tucked away at the far end of a business park in the suburbs of Toulouse. Having worked at Le Meurice during the Alléno era, he skilfully handles French cuisine, with modern dressings. The dining room, like his cuisine, is sober and contemporary, with white tablecloths, well-spaced tables and a calm atmosphere. The ballet of service is rigorously led by a young chef de salle. Two menus (4 or 7 courses) feature all à la carte dishes. Tonight, barbecued tuna is sublimated by eggplant maki and eggplant/coconut satellite tartare, all tied together with a sesame-honey-lemon vinaigrette: a real treat. Béarn beef is served in two courses, first in a shabu-shabu style with a chard condiment, then in a hearty chuck raviole. The black fruit dessert plays with different textures, including a rice/ sesame tuile that softens the acidity of the creamy gavotte. The wine cellar covers all the regions of France, with prices to suit all budgets. In the dining room, a friendly team completes the experience.
