Remarkable Restaurant In this beautiful blind room, framed by brand new La Gaude barrels, the initiatory atmosphere is easily created. In fact, it's a great lesson in Japanese cuisine, delivered by a well-trained staff. Throughout the meal, explanations and translations are provided with a smile for the uninitiated, each term being accompanied by its subtitles: yuzu, ponzu, saké, omakasé, wakamé... The nine appetizers ("Hassun") may seem too numerous, but they are part of this rare ceremony that requires concentration to grasp all the nuances of chef Kazu's six-course menu, which continues with lamb tataki sansho and sudashi, otoro en Te maki caviar citron et saké (tuna with lemon caviar and sake), the dashi whitefish zucchini and yuzu, perfect sashimi (the otoro very well presented with the ritual wasabi root grated in front of you on the shark skin), grilled Miyasaki beef with binchotan fig and eggplant before closing the ball with a fine assortment of desserts. Very good service, serious without being overly professorial, and access to the gastro's immense cellar to indulge every pleasure.
