Gault&Millau's review 2026

Matthieu Derible has taken over perfectly from Matthieu Dupuis Baumal. Of course, the stakes are high, but our first visit, very soon after he took over, allows us, without risk, to maintain the four toques while awaiting a definitive evaluation. Congratulations, on this first occasion, for the muge with sweet spices, the Port-en-Bessin scallops and Corsican pomelo, the bold marriage of red mullet and veal strawberry with a fish soup in red wine, and the whisky and vanilla dessert.
