Gault&Millau's review 2026

Japanese chef Hitoshi Araki (former second-in-command to Yannick Delpech in Colomiers, and previously at Lameloise) took up residence near Les Carmes in July 2019, and has quickly become the attraction for Toulouse's fine dining enthusiasts. His small (and not very interesting) dining room is always full, service after service (22 covers, not one more). It has to be said that the man, alone in the kitchen, has a diabolically Japanese precision when it comes to working with mostly noble products. The execution is perfect, the cooking nickel, the flavors frank, the tastes ultra-marqued and the plates copious (far from the minimalist portions one might imagine). It's a pity, however, that the six-course menu (a must if you want the sublime pan-fried foie gras) has gone from €48 to €60 in two years, but this has been compensated for by much improved service and a more extensive wine list. wines on offer include Coulée de Serrant, Lucien Crochet Sancerre, Domaine de la Préceptorie, Domaine de la Pinte and Vincent Bachelet.
