Chef's Restaurant The young and undoubtedly talented Balthazar Gonzalez has left the "table d'hôtes" concept to one side for six superb tables for one-night guests. At €134 for the hidden menu, you've got to like bets, and the chef's savoir-faire is certainly worth a visit. If only to adjust a note upwards, for many good sensations: with green asparagus, cucumber flowers, lemon confit texture, asparagus ice and elderberry, carbonara with guanciale and pecorino, lobster in declension or red tuna with barnacles. An excellent sommelier capable of reinventing pairings with original combinations.
