Chef's Restaurant A discreet restaurant close to the French National Assembly, its intimate upstairs dining room attracts a fine clientele of regulars, seduced by the exemplary welcome of Guillaume Muller, the owner. The cuisine is always both refined and familiar, seeking out the best of the terroir, from the family farm in Limousin for example, or highlighting offal, with a veal brain served in a root vegetable broth with chili oil. We appreciated the oysters delicately placed in an emulsified beetroot-blood orange juice with red peppery seaweed, a fine starter offering freshness and gourmandise, before the saint-pierre aided by a smoked garlic jus. Slightly less enthusiastic about the rack of pork, textured Jerusalem artichoke, roast, mousseline, chips and black olives, and the honest vanilla dessert, quite simple for a logically copious bill. A broad, well-balanced wine list.
