Chef's Restaurant What a pleasure it is to find Patxi Massonde back at the stove in a new home! The man who once delighted us at Ainhoa (Oppoca) has taken over and restored this beautiful place with his wife Marilyn, in an eco-responsible approach, with hotel and outbuildings on the Jurançon hillsides. And the chef still has his finger on the pulse of the local produce he knows so well how to bring out the best in, in a pleasant gustatory stroll, without unnecessary sophistication or fuss. After the pretty appetizers on this €55 menu, red tuna from the Saint Jean de Luz fish market, shitaké condiments, zucchini and slivered almonds, slices of black Bigorre pork, peach slices and winemaker sauce for a brilliant start, the heart of scoter, chard, carrots, seasonal vegetables, fava beans, onions, cherry tomatoes, tomato concassé, a simple, gourmet dish where every ingredient finds its place, before the freshness of strawberries with garden herbs (in ganache and ice cream), caramelized chiboust cream. Well-stocked regional and general wine cellar, smooth service supervised by Marilyn.
