Gault&Millau's review 2025

This bistro in the Hédas district, which opened two years ago, is a convivial, relaxing place for bon vivants. The products are well chosen, the joy (Joïa) is in the plates, well garnished and well served, by hand (Maa), in all kindness. The lunch menu is short, appetizing and affordable, with a fair-trade menu at €22: cauliflower velouté and dried duck breast, Py trout, carrot purée with cumin, crisp white cabbage, fennel and shallot cream, floating island with salted butter caramel coffee cream. Regional cellar with a dozen wines by the glass and Aussau organic beer from Pau.
