On the outskirts of Toulouse, Franck Reminel welcomes guests in a rare setting - modernized barn, exposed stone and beams, terrace almost overlooking the vegetable garden. Two menus at €122 for four courses and €158 for five courses showcase a cuisine of noble, masterful and gourmet ingredients. Morel mushrooms and foie gras, combined with a poultry-truffle sauce, confirm the chef's talent in a regressive register. The langoustine on a caramelized onion, caviar and lemon caviar tart is even more seductive. The pigeon and beet, sweeter than expected, lacks generosity. A fine transition is provided by a cheese based on the Vic-Bilh ring, before a pear and liquorice dessert that concludes with freshness. The wine list is broad and well-constructed, covering all the regions of France, with some welcome half-bottles, and the sommelier offers good advice. The service, finally, could do with a little relaxation to fully accompany the experience.
