Hitoshi Araki has the rising sun on his side, and is delighted to be able to drop a €60 bill for this meal, obviously hidden, obviously a surprise in six plates. The chef twirls with his seasonal produce, transformed and prepared with total precision, but also in keeping with a certain Gascon gourmandise, acquired notably at Yannick Delpech's in Colomiers. The result is a pleasing sequence, renewed week by week and season by season, aided by attentive service and a wine cellar that draws from all regions (La Rectorie in Collioure, Domaine du Cros in Marcillac, Saint-Benoît in Jura...).
