Remarkable Restaurant Opening in 2019, the flagship restaurant of the superb Hotel Imperator, renovated by Marcelo Joulia, has been welcoming a new chef alongside executive chef Nicolas Fontaine for the past few months. Pierre Gagnaire still oversees the kitchen, signing the menu jointly with his new lieutenant Masaki Nagao, who succeeded Julien Caligo. The spirit of the cuisine hasn't fundamentally changed, with our academician's signature still very much in evidence, on the delicate broth of wild seaweed, shellfish, sorrel leaves, tofu and rhubarb stalks, or on the risotto Otello from Piedmont and morels in squid ink and eel seared with binchotan, two dishes that clearly carry all the soul of the great chef. We finish, of course, with the grand Pierre Gagnaire dessert, which rounds off this great menu, which cohabits with a remarkable cellar of impressive verticals. Service of a great house, hushed atmosphere, among good company.
