Chef's Restaurant Matthias Leuliette seems to have rediscovered his passion for cooking, while letting his imagination run wild with trompe-l'œil and other pirouettes. He has kept his childlike spirit, which he wants to share with his customers, in his desire to surprise with the textures presented, his agility in playing with flavors, even if, to have a good dinner, you have to like to play, at the risk of being disappointed. Between creativity and aestheticism, gastronomy has found its place, breaking certain codes and relying on beautiful local products that are not denatured. Among this flurry of toys to eat, a trompe-l'œil olive, a tequila paf, cube-shaped starters (mushroom truffle), gout d'eau lemonade yuzu sea lettuce, "like a tomato", his now classic foie gras in the shape of a bathroom duck, hake koskera also showing real mastery, chermoula sauce (cumin, coriander, mint, olive oil), pil pil sauce, fish collagen emulsion, chive oil, fresh seasonal peas, green asparagus, mussels... We finish with a dessert of shiso leaf, hibiscus leaf, pineapple carpaccio with dried pepper, bissap and lime. Southwestern cellar extended to Spain, with the possibility of further increasing the degree of confidence with the proposed pairings, obviously blind. Two toques this year.
