Chef's Restaurant The location, in the middle of the vineyards, with a wide view over the plain, the vineyards and the Uzétois hills in the distance, is superb. Julien Lavandet has turned it into an ever-improving "home", working at his piano to the rhythm of the seasons and nature. While plants are paramount, the emphasis on livestock and fisheries is in keeping with the same sense of preservation and sustainability, as he carefully chooses each item on his beautiful 5-course menu (€95): langoustines with green asparagus and morels stuffed with beurre blanc, frog legs with horseradish condiment, farm-raised guinea fowl from the Ardèche with maffé sauce, chocolate tartlet with salted butter caramel macadamia praline and cocoa sorbet. The 8-course menu costs €125. The wine cellar offers some fine local finds.
