Remarkable Restaurant This is the best table in Uzès, and Christophe Ducros' efforts to maintain this level are commendable, as each of our visits confirms our impression of a lively, resourceful table that knows how to surprise us: crumbled crab with shellfish and green bean glaze, Mediterranean yellowtail with "sauce à manger" (tomato and cucumber), Mediterranean sea bass with broccoli cream and bourride sauce, very good pigeon with tender, pink flesh (but the bread promised to accompany it never arrived), eggplant caviar tartlet, liver tapenade, shallot confit, reduced juice. Good dessert strawberry vanilla cream white chocolate Espelette pepper sorbet red bell pepper. The well-involved service - a skilful sommelier with good advice who knows how to serve half glasses to maintain the right temperature, taken from a powerful regional cellar - and the graduated prices confirm the toques.
