Chef's Restaurant Last year, Alexandre Polmard, from the butcher's of the same name, and Maxime Petit, a native of the region, relaunched the former Paloma to give it new credentials (starting with haute couture meat, of course) and a signature, thanks to a strong team, including Manuel Rondan, a Peruvian chef with a great track record, and Grégory Sordillon, the pastry chef. Nikkei influence, of course, with the impeccable ceviche, but also a very good pot-au-feu, cheeses from the Marchand brothers (the near-neighbors of the historic butcher's shop) and the pims mandarine from a high-performance €65 menu, in a relaxing and charming setting, a few bends below the old village. The cellar already boasts a number of wines from great winemakers.
