Gault&Millau's review 2026

This institution, in the hands of the Schneider family for five generations, is now represented by Stephan. The former farmhouse has become an elegant building combining traditional stone walls with a modern cube of wood and metal. Crystal lovers will appreciate the pieces on display in the windows, as well as the crystal trees from the Saint-Louis factory on the table during the Christmas markets. The cuisine is refined and features the house classics: scallops from the Bay of Saint-Brieuc, Bouchot mussels, creamy emulsion with shellfish fumet or oven-roasted organic capon, butternut and kale palet, a fine balance of creams and flavors on the Paris-Sarreguemines. And that's what appeals to the restaurant's mostly cross-Rhine clientele, as do the particularly warm welcome and service. A slight lack of audacity in the composition of the plates is to be regretted, a classicism also to be found in the choice of the cellar.
