Remarkable Restaurant Here's a young chef who knows how to take risks, put his shoulder to the wheel and give his all to his house. Sébastien Tantôt, who has worked with some of the greats (Alléno, Gagnaire, Passedat), brings this village inn to life with passion and determination. At a time when some are practicing secrecy, improvisation and reducing the number of services, he opens five days a week, lunch and dinner, and offers great accessibility with his "Table de César" and its €30 menu. In the gastro department, the tone is one of personality and commitment, for example in the first Les solitaires menu, where he gives a few keys to his production, the first fruits of seasonal freshness (tomato water with cosmos flower), the "diaphanous frogs" with his fingertips, the unmissable "vitrail", a tribute to the village and its abbey, in this case based on tuna garum zucchini and bottarga from Martigues, the steamed soufflé of yellow chicken velvety with yellow wine and foie gras... From the staging, to the ideas for preparations and presentations, the imagination is there, right down to the desserts, like the "crystalline, souvenir of a wedding dress". Two other proposals at €145 and €230, dedicated and attentive service, and a growing cellar with contemporary references. At the end of September 2024, we learned through Sébastien Tantôt's networks that he had reluctantly decided to close his restaurant.
